Chocolate Raspberry Muffins {Frugal Recipes}

Chocolate-Raspberry-MuffinsMuffins are an easy sell around our house.  Perfect for snacks and beyond, I love sharing a delicious, healthy muffin that our whole family can enjoy.  These Chocolate Raspberry Muffins have the draw of chocolate and added health benefit of the raspberries.  Moist and delicious, this is a recipe we make all year long but are especially delicious with freshly picked raspberries.  It won’t be long now!

Chocolate-Raspberry-MuffinsIngredients:

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated organic sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 cup almond milk
  • 1/3 cup canola oil
  • 1 large egg, beaten
  • 12 large raspberries for topping

Directions:

  1. Preheat oven to 400 degrees.  Grease your muffin tin or line with 12 muffin liners
  2. In large bowl, combine flour, baking powder, baking soda, sugar and cocoa and set aside
  3. In a separate bowl, combine milk, oil and egg
  4. Add the dry ingredients to the wet until well blended
  5. Fill each muffin cup  (I use a medium size scoop to do this)
  6. Top each muffin with one large raspberry
  7. Bake for 18-20 minutes or until toothpick comes out clean
  8. Allow to cool and enjoy!
