Easy Spinach Flatbreads: Under 200 calories {Frugal Recipes}

Easy-Spinach-FlatbreadAs the weather starts to get nicer, we begin craving some of the earliest crops that arrive.  I think after a long Winter, we are ready to eat some fresh greens and perhaps kick start our healthier eating habits in anticipation for bathingsuit season.  One of the healthiest vegetables we love to incorporate is fresh spinach!  Spinach is so good for you and it’s great to expose your little ones to it at an early age.  These flatbreads are super healthy and easy.  They are great for a light dinner or appetizer!

Ingredients:

  • Package of lavash wraps (we use Joesph’s garlic and herb)
  • 2 cups of fresh spinach
  • 1 cup of onions, sliced
  • 2 tomatoes, sliced
  • 1 tsp cayenne pepper
  • 4 slices of cheddar cheese

Directions

  1. Preheat oven to 350 degrees
  2. Lightly spray cookie sheet with non stick spray and lay out your four lavash wraps
  3. Top your flatbreads with spinach, tomatoes, onion, cheese and sprinkle with cayenne pepper
  4. Bake for 10 minutes until crisp
  5. Slice and serve (makes four servings)
  6. This is a great light dinner and the cayenne pepper boosts your metabolism.  This flatbread has about 200 calories and is surprisingly tasty.  For added protein, top with grilled chicken or shrimp
