Easy Veggie Scramble {Frugal Recipes}

Easy-Veggie-ScrambleAs the weather continues to get nicer, I’m continuing to try to eat less (try being the operative word!)  This veggie scramble kicks up my metabolism first thing in the morning and gives me the energy to kick my workout up a notch and get through to lunch without snacking.


  • 2 eggs
  • 2 tablespoons fresh salsa (I use hot)
  • 1/2 cup spinach
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon feta cheese (optional)
  • salt and pepper to taste


  1. In a large bowl, whisk your eggs until combined
  2. Add cayenne pepper, salt, pepper and spinach and stir until combined
  3.  Over medium heat, spray non stick spray on frying pan
  4. Add egg mixture and allow to cook, once edges begin to lift, add feta cheese
  5.  Scramble eggs until desired consistancy and remove from heat
  6. Enjoy this extra protein boost for breakfast!

Eggs contain a variety of vitamins and minerals, they are a great way to start your day.  Here’s a little info about what is in that little oval:

Vitamins –

  • A: good for the skin and  growth
  • D: strengthens bones by raising calcium absorption
  • E: protects cells from oxidation.
  • B1: helps properly release  energy from carbohydrates.
  • B2: helps release energy from protein and  fat.
  • B6: promotes the metabolism of protein.
  • B12: an  essential vitamin in the formation of nerve fibers and blood cells.

Minerals –

  • Iron: essential in the  creation of red blood cells.
  • Zinc: good for enzyme stability
  • Calcium: most important mineral in  the strengthening of bones and teeth
  • Iodine: controls thyroid  hormones
  • Selenium: like vitamin E, it protects cells from  oxidation
