Grilled Portobello Mushroom Burgers with Feta {Summer Grill Series}

This summer give your kitchen a break and cook outside! This is the first in our Summer Grill Recipes series! Each week we will bring you a healthy and yummy recipe that is completely made on the grill. Go beyond the basic hot dogs and hamburgers and explore some really great food!

Even non vegetarians love this delicious Grilled Balsamic Portobello Mushroom Burger topped with Feta, red onion and chipotle mayo.  Served on an onion roll, this burger is bursting with flavor and is meaty enough to satisfy the big appetites! 

Grilled-Portobello-Mushroom-BurgersIngredients:

  • 8 large Portobello Mushroom caps (look for caps a little larger than your hamburger buns)
  • 2 tsp kosher salt
  • Feta cheese
  • 1 red onion, sliced
  • 8 good quality onion rolls
  • Balsamic Marinade (recipe below)
  • Chipotle Mayo (recipe below)

Grilled-Portobello-Mushroom-Burgers

Balsamic Vinaigrette Marinade

  • 1/4 cup balsamic vinegar
  • pinch of kosher salt
  • 1/2 tsp ground pepper
  • 1 clove of garlic, minced
  • 1/4 cup extra virgin olive oil

Chipotle Mayo

  • 1 cup mayo
  • 2 cloves garlic, minced
  • 2 teaspoons fresh lime juice
  • 1 teaspoon chipotle chili powder or chipotle sauce
  • salt and pepper

Whisk mayo with garlic, lime juice, chipotle powder/sauce, add salt and pepper to taste.  Refrigerate and serve

Directions:

  • Wash portobello mushrooms and set aside.  In shallow baking dish, pour balsamic marinade evenly over mushrooms and allow to absorb for about 1-2 hours
  • Prepare your grill – preheat it and set to grill for medium heat
  • Place your mushrooms on the grill, top side down.  Close your grill and allow to cook for 5 minutes.  Check caps to ensure they are not burning.  Top with feta cheese and allow to cook for an additional 5 minutes.  Do not flip your portobello mushrooms, you want to ensure the marinade and juices remain inside the cap
  • Place your onion rolls on a plate, remove mushrooms from your grill, top sliced onion and 1 tablespoon of chipotle mayo and enjoy!
