Healthy Wild Blueberry Muffins {Frugal Recipes}

Healthy-Wild-Maine-Blueberry-MuffinsWe’re big snackers around here and I like to make sure I’m offerring quality and healthy snacks for my kids.  I find that it’s much more economical  to make our snacks instead of buying packaged and processed foods.  That being said, these Wild Blueberry Muffins were a huge hit this past weekend.  They are wholesome, tasty and versitle.  Good for a quick breakfast or a school snack, this is one you can feel good about sharing!


  • 1/2 cup unbleached white flour
  • 3/4 cup whole wheat flour
  • 3/4 cup old fashion oats
  • 2 teaspoons baking powder
  • 1/3 cup brown sugar
  • 1 tsp chia seeds
  • 1 egg, whisked
  • 1 tsp vanilla extract
  • 3/4 cup almond milk
  • 1/3 cup canola oil
  • 1 cup frozen organic Wild Maine Blueberries (we use Trader Joe’s)


  1. Heat oven to 400 degrees
  2. Combine the first six ingredients in a bowl and set aside
  3. Combine the next four wet ingredients (egg, oil, milk and vanilla)
  4. Slowly add the wet ingredients to the dry
  5. Gently fold in the blueberries and do not overmix
  6. Fill muffin cups or greased muffin pan – I use a medium scoop for this to make it easier
  7. Bake for 22-25 minutes
  8. Remove and allow muffins to cool
