Mini Caprese Skewers {Frugal Recipes}

Mini-Caprese-SkewersWe’re not Italian, but we might as well be!  Nothing screams Summer to our family like garden fresh tomatoes and basil.  It is so deliciously fresh, I could eat it all day long.  My kids like it too and I was shocked recently when my daughter requested a basil/mozzerella/tomato combo for her after school snack!  I decided to whip up these mini version and they were a huge hit!  I also have been sending my daughter some in her lunchbox as a side.  She’s been thrilled!  Healthy, good and fresh!  Introduce this simple Mini Caprese Skewer snack to your family and offer some new and delicious flavors to your little ones!

Ingredients:

  • Grape tomatoes
  • toothpicks
  • basil leaves
  • bocconcini, sliced in half (fresh mini mozzerella balls)
  • balsamic vinegar (optional)

Directions:

  1. Simply put a tomato, followed by a slice of mozzerella and a piece of basil on your toothpick and you’re good to go!
  2. Top with balsamic vinegar if you’d like!
