Sweet Potato Quesadillas {Frugal Recipes}

Sweet-Potato-QuesadillasSuper easy, packed with nutrition and economical?  Sign me up!  A few weeks ago, I was looking to make dinner without having to run to the grocery store.  I didn’t have much in my cupboard but I decided to utilize what I had in my pantry instead of spending money!  That’s where these delicious Sweet Potato Quesadillas came from!   Sweet potatoes are bursting with beta carotene, Vitamin C and Vitamin A.  Often considered a “super food” this is one worth offering to adults and children alike!  The whole family enjoyed them and have asked for them over and over again.


  • 1 cup of salsa
  • 3 sweet potatoes
  • 1 cup of cheddar cheese
  • 8 whole wheat tortillas (or regular)
  • 1/2 cup sour cream or plain greek yogurt (optional)


  1. Bake sweet potatoes until fully cooked and tender.  Once cooled, squeeze potatoes into a bowl and discard peels or save peels to slice and mix in a salad at a later date – they are good for you!
  2. Mix 3/4 cup of salsa in with your potatoes.
  3. Spray a cookie sheet with non-stick spray and lay four tortillas out.
  4. Sweet-Potato-QuesadillasSpread sweet potato mixture evenly throughout your tortilla.  Top with cheese and another tortilla.
  5. In preheated 350 degree oven, bake for 12-15 minutes or until golden.  Cut into wedges.  Top with remaining salsa and sour cream/yogurt.
