Veggie Bean Burritos {Frugal Recipes}

Veggie-Bean-BurritosWith Summer approaching, I am hoping to get my oldest daughter to be “in charge” of preparing some meals for us during the week.  Simple, healthy and economical meals that have just a few ingredients but will help her feel independent and give her a task to complete!   These veggie bean burritos are about as easy as you can get – and healthy too!

Ingredients:

  • 1 can of refried beans, black beans or refried black beans
  • Spinach
  • Peppers & Onions (or any veggies of your choosing)
  • Cheese (optional)
  • Salsa
  • Guacamole
  • Whole Wheat tortillas

Directions:

  1. Lay tortilla out, spread beans
  2. Top with peppers, onions, spinach and cheese if desired
  3. Wrap each burrito and put in casserole dish
  4. Heat oven to 350 degrees and bake burritos for 15-18 minutes or until golden
  5. Top with guacamole and/or salsa
