Random Recipes – Pumpkin Cranberry Granola Bars

So I decided to do a Random Recipe today instead of Wordless Wednesday because I didn’t have a picture ready and honestly I was so tired this morning it would have been my coffee cup or my pillow since I need more of each! This recipe (and picture) comes from Once A Month Mom where each month they offer a meal plan for cooking your entire month’s worth of meals in one day. Since I’ve been wanting to try making our own granola bars (so we can control what goes in them) I thought this sounded like a great recipe to try. Please let me know if you make these as I would really like to hear your thoughts.

Ingredients:

  • 3 1/2 cups quick-cooking or old-fashioned oats
  • 3/4 cup pumpkin puree
  • 1 cup dried cranberries
  • 3/4 cup brown sugar
  • 1/4 cup all-natural, unsweetened applesauce
  • 1/4 cup honey
  • 1/2 tsp. vanilla extract
  • 1 tbsp. pumpkin pie spice
  • 1/2 tsp. salt

Directions:
Preheat oven to 350°F. Spray an 8×8 cooking pan with non-stick spray and set aside. Stir all ingredients together in a mixing bowl until well-incorporated, then press into prepared pan and bake for 45-50 minutes or until golden brown and set.

Freezing Directions:
Cool completely, then cut into bars. Wrap bars individually in plastic wrap, then place all bars in a freezer bag. Seal, label, and freeze. Thaw at room-temperature.
