Our family has a favorite pizza that we order every time we go to our local pizza restaurant. It’s called “The Little Miss Molly” named after a little girl that passed away from cancer in our town. Not only is it yummy but they donate a portion of the money to the Molly Fund. Well the other night we had leftover chicken and decided to make our own “Little Miss Molly” pizza at home. All amounts are an estimate since I just threw thing together.
Ingredients:
- 1-1/2 cups of cooked Chicken Breast, diced (we used leftover rotisserie chicken from the store)
- 1 cup of Honey BBQ Sauce
- 2 cups of Baby Spinach, diced
- 1/4 to 1/2 of Red Onion, diced
- 1 cup of fresh smoked Gouda cheese, grated
- 1 pre-made Whole Wheat pizza dough
- 2 tbsp of butter
Directions:
- Heat oven to 425 degrees. Start to saute onions in a pan with butter. Add spinach once onions are about half cooked.
- Spray a pizza tray or cookie sheet with cooking spray and spread out the pre-made pizza dough.
- Take 2 tablespoons of BBQ Sauce and spread out over pizza dough.
- In bowl, mix rest of BBQ Sauce with cooked, diced chicken
- Spread BBQ chicken mix on to pizza dough.
- Take cooked onions and spinach and spread on top of BBQ chicken
- Grate about 1 cup of fresh smoked Gouda or another soft cheese on top of everything
- Cooked for 15-20 minutes depending on your oven
